Creamy White Chili

It is cold and windy here today. We’re actually under a wind advisory until tomorrow and it’s bringing the temperature down significantly. This morning, the weather forecast said that we may have a wind chill of below freezing. Now that’s cold! Certainly for these southern bones. 😉

So, for dinner tonight, I am going to make this awesome Creamy White Chili. It is a family favorite around here.

  • 2 lbs boneless, skinless chicken breast cooked & shredded
  • 2 onions chopped
  • 3 tsp garlic powder
  • 2 tbsp oil
  • 4 cans (15.5 oz ea) Great Northern Beans rinsed & drained
  • 2 cans (14.5 oz ea) chicken broth
  • 3 cans (4 oz ea) chopped green chiles pureed (or you can leave it like it is)
  • 2 tsp salt
  • 2 tsp cumin
  • 2 tsp oregano
  • 1 tsp pepper
  • 1/2 tsp cayenne pepper
  • 2 cups sour cream
  • 1 cup heavy whipping cream
  1. In large saucepan, saute chicken, onion, and garlic powder in oil. Add beans, broth, chiles, and seasonings. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Remove from heat; stir in sour cream and heavy whipping cream. Serve with oyster crackers.
Recipe Notes

Optional: You can add 2 cups of corn. Thicken with potato flakes.
